Grandma Jessie's Famous Banana Cake

Serves 15 (with some seconds/leftovers)

My grandmother Jessie was famous for this banana cake, and friends and family always requested it at holidays and birthdays. I remember the excitement of sleeping over her house and having her serve a piece just for me.

I think the secret to its success is the mix of banana and chocolate, but you can certainly serve it without the chocolate frosting. Some in my family like it served fresh, others like it the way Jessie served it: baked 4-5 days earlier and frozen until party day. Freezing it seems to make the cake denser and the frosting more like a chocolate shell. I personally like to eat it right out of the freezer. Try each different way and choose for yourself. Either way, it won't last long!

2-1/2 cups sugar
1 cup butter
4 eggs
1 dash of salt
2 teaspoons baking soda
8 tablespoons sour cream
2 cups mashed banana
3 cups pastry flour (I like Swan's Down)
2 teaspoons vanilla extract

In large bowl, cream butter and sugar until smooth.
Add lightly beaten eggs.

In separate bowl, dissolve baking soda in sour cream. Add to ingredients in larger bowl. Beat well.

Add bananas, pastry flour, salt, and vanilla. Mix well.

Pour into well greased 9x13 pan.

Bake at 350° for approximately 1 hour (check at 50 minutes), or until cake is a golden brown and toothpick comes out clean when poked into middle of cake. Let cake completely cool before frosting.

Generously frost top and sides of cake using the Hershey's Chocolate Frosting recipe below (my grandmother insisted this was the best frosting for her cake). After frosting, place cake in refrigerator until frosting has hardened.

Remove from refrigerator and let return to room temperature before serving.

Hershey's Quick Chocolate Frosting

3 tablespoons butter or margarine
3 bars (1 oz. each) Hershey's Unsweetened
Baking Chocolate, broken into pieces
3 cups powdered sugar
1/2 cup milk
1 teaspoon vanilla extract
1/8 teaspoon salt

Melt butter in small saucepan over very low heat; add chocolate. Cook, stirring constantly until chocolate is melted and mixture is smooth. Pour into large bowl.

Add powdered sugar, milk, vanilla and salt; beat on medium speed of electric mixer until well blended.

Refrigerate 10-15 minutes or until of spreading consistency.

Serve fresh or freeze for up to 1 month for later use.
