This recipe for a mixed Berry Crisp is so yummy it needs no introduction. Just whip it up for dessert tonight, serve with a little vanilla ice cream and enjoy. It's out of this world!
p.s. A big thank you to Gloria Getzug for inspiring this recipe!
CRISP INGREDIENTS
1 cup flour 1/2 cup light brown sugar 1/2 cup granulated sugar 1/4 teaspoon salt 1/2 teaspoon ground cinnamon 1/4 teaspoon ground ginger 7 tablespoons butter cold
BERRY INGREDIENTS
1 1/2 cups blueberries 3 cups raspberries 2 cups blackberries 3 tablespoons flour 1/3 cup sugar
INSTRUCTIONS
Preheat oven to 400°.
In a large baking dish (9 x 11 rectangular pyrex or a QT oval as we used here) mix all berry ingredients and set aside. Make sure all berries are coated in the sugar and flour mixture.
In a large mixing bowl, combine all the dry ingredients. Next, cut the butter into the mix using a pastry knife at first and later your hands. You really need to use your hands to get the right consistency, a kind of flaky dough like mixture. (see photo).
When completely mixed, sprinkle over the berries, covering all but the edges.
Bake uncovered for 40 - 45 minutes or until the crisp topping is lightly browned. Please note that some of the crisp topping will cook into the berries.
Serve warm over vanilla ice cream -- then try and save some leftovers for yourself tomorrow.
