Surprise Cupcake Cones |

Every year around "Birthday Time" for my kids I try and come up with neat and original ideas, whether it be clever and fun "theme" party ideas (and I have come up with some doozies, which I can share at a later date) or a new way to serve dessert. Now my kids are 11 and 13, but there is one idea that works each and every time I make them...Surprise Cupcake Cones. These can be made to serve at their parties, or (in the case of my younger child), a birthday treat we took into the class to celebrate. They are very easy to make and always a hit.
INGREDIENTS Wafer Ice Cream Cones (these are the flat bottomed cones) 1 box yellow cake mix and additional ingredients listed Muffin/Cupcake pan Frosting Colorful sprinkles
DIRECTIONS Follow the instructions on box of cake mix to make the batter. After batter is mixed, add sprinkles into the mix (about 1/4 cup). When kids bite into the cupcake cone they will find the sprinkle "surprise".
Arrange cones in muffin/cupcake pan. Once filled with the batter they will not fall over. Fill each cone with cake batter to a little over 3/4 full. Do not over fill.
Bake according to instructions on box, making sure cones are upright in oven. Test with a toothpick to make sure batter is thoroughly cooked.
Remove from oven and cool.
Frost cupcake cones. (Hint: place frosting in a small ziplock bag. Seal bag and make a small hole in one corner. Squeeze frosting out of corner of bag onto cupcake.) Add sprinkles on top if desired.
