Campfire Cookies |

My daughter and I came up with this recipe for a local Girl Scout Cookie Recipe Contest in January. She named them Campfire Cookies because they have all the ingredients of that beloved of campfire treats the S'more.
It took us a few days of baking to come up with a recipe that actually worked. Some cookies came out too runny (marshmallow in the batter). Some came out too flat (not enough flour). Others just didn't taste that great.
And of course we had to test each batch... not exactly a part of my New Year's healthy eating resolution I can assure you. But the results were worth it. Lo and behold our Campfire Cookies won 1st Place in the contest. My daughter was thrilled, as was I...and then I got back on the treadmill to work off some of these yummy cookies.

INGREDIENTS
1/2 cup butter 1 cup sugar 1 egg 1 1/3 cups all purpose flour 1/2 cup finely ground graham crackers 1/4 c. milk 1/2 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon vanilla 6 ounces chocolate chips 4 cups mini marshmallows (approx.) 1 pound dipping chocolate pieces Wax paper
DIRECTIONS
1. Preheat oven to 350°.
2. Cream butter and sugar in a mixing bowl.
3. Add milk, egg and vanilla. Mix well.
4. In separate bowl, combine flour, ground graham crackers, baking soda and salt. Mix slowly into previously mixed items.
5. Add chocolate chips.
6. Drop rounded spoonfuls of batter onto ungreased cookie sheet.
7. Bake at 350° for 10-12 minutes or until light golden brown.
8. Immediately after pulling out of oven, top each cookie with 6-8 mini marshmallows. Return to oven for 1 minute or just until marshmallows begin to soften and expand. After pulling cookies out of the oven, use a spatula to lightly flatten marshmallows.
9. Remove cookies from baking sheets and put on wire racks to cool.
10. While cookies are cooling, melt the dipping chocolate pieces. This can be done in the microwave in 30 second intervals or using a double boiler. The trick is to melt chocolate only part way and then stir until rest of chocolate melts. This way chocolate doesn't overcook.
11. Spoon chocolate over top of cookies covering top and sides completely. Place cookies on wax paper and wait approximately 15 minutes for chocolate to harden.
12. Eat cookies accompanied by a glass of cold milk. Yummy!
